It all started in the early 1990s when Duncan overheard a conversation in a cafe while a couple was talking about the French truffle experience at a restaurant in Paris. Perigord talks about the fascinating flavors of truffles and the convincing truffle scent throughout the restaurant, and most importantly how they are found in the winter in the northern hemisphere. Perigord Knows that this is the beginning of Duncan's truffle journey, and the first truffle in Australia was harvested in Tasmania on June 18, 1999. Between hearing the truffle's conversation by accident and first discovering truffles, he critically reviewed the truffle literature, travelled to France several times to study truffles, and conducted market research in Europe, Japan, and the United Kingdom.
